Rather than blending vast quantities, the distillery isolates these well-aged stocks into carefully numbered, highly controlled small batches of no more than 150 casks. Cut to an approachable and silky 40% ABV, the final liquid spends an additional three months marrying in large wooden tuns to achieve an extraordinary, award winning level of harmony, depth, and structural elegance.
The nose is wonderfully rich, complex, and autumn-focused, opening with inviting aromas of ripe orchard fruits, baked toffee apples, and spiced pear, which gracefully give way to deeper layers of rich dried fruits, dates, and elegant oak wood.
